Hearty Spicy Lentil Soup.


The weather in Brisbane at the moment is rubbish, there is no way to sugar coat it. Outside my window is a constant drizzle of rain, which really limits your activities, especially on a weekend. This weather makes you want to just snuggle up and stay indoors, with a nice big bowl of...you guessed it, spicy lentil soup.

I made this soup this morning and oh my god, it is delicious! Packed full of flavour and spice, it will be sure to warm your soul during these chilly days. All you will need is...



On medium heat is a large soup pot, melt your coconut oil and cook the onion until it softens. Then add the carrots and celery, and cook everything for another minute or two.
Next stir in the paprika, garlic, cumin & cinnamon. Then add your lentils, vegetable stock and bay leaf, and stir it all together again.
Bring your mixture to the boil, and then reduce the heat to low. Allow it to simmer, uncovered, for 30-40 minutes or until the lentils have softened.
It's then time to serve up and enjoy your delicious spicy lentil soup!
