Oat & sultana cookies.


Cookies are just the ultimate snack. They are perfect for when you are running out the door but need a little pick me up, and they go perfectly with a cup of tea in the afternoon. The problem is, they are not the healthiest of treats. But fear not my foodie friends, I have a solution to this ever so concerning conundrum. Let me introduce you to my healthy oat and sultana cookies.

All you will need is:




Firstly preheat your oven to 180°C (360°F).
Then in a large bowl combine the rolled oats, dedicated coconut and flour. Next add your honey, coconut oil, cinnamon and sultanas to this mixture.
Mix all of this together, feel free to relieve your childhood cooking experiences and use your hands.
Then split the mixture into 8-10 small cookies, placing them onto a baking tray lined with baking paper. Ensure you press them down, to create that perfect cookie shape. Also don't be worried if they aren't a perfect circle shape, it adds to their rustic feel.
Pop them in the oven for 10-15 minutes, or until they have a crusty golden outside. Then enjoy!
